Food is like fashion. No, not in the way that cauliflower is the new black (although it is). More like: Every trend is cyclical. Just as bell bottom pants surged in the 70s and resurfaced in the 90s, molten chocolate cake was due for a comeback. Sure it’s a little kitschy, and sure, it may be on the dessert menu at, uh, literally every restaurant ever, but we’ve got a soft spot in our hearts for this gooey dessert. And there is no better time to bring back the molten chocolate cake than Valentine’s Day. After all, is there anything more romantic than sharing a rich, sweet, melty dessert? (Well, yes, not sharing one. Maybe you should make two).
Most molten chocolate cakes—also known as “lava cakes”—get wrong is that they achieve that oozing chocolate center by deliberate under-baking.
